Roasted Golden Beets

My first attempt at roasting beets was a success. Not that it took much effort. I simply wrapped the beets in aluminum foil and baked at 400 degrees for about 45 minutes. They come out of the oven perfectly sweet to enjoy plain. I have been putting them in salads and eating them sliced.
Whole wheat pasta with tofu and kale served alongside a butter lettuce salad with avocado and beets. Drizzled the salad with a homemade balsamic vinegar, pepper flakes and garlic dressing.
Washed everything down with a non-alcoholic POM spritzer.

Things in my salad:

  • Butter Lettuce
  • Avocado
  • Roasted Golden Beets
  • Red Onion slivers
  • Balsamic Vinegar infused with red pepper flakes, fresh thyme, fresh garlic and EVOO
